Smoked Salmon Sandwiches

Ingredients
- 2/3 cup reduced-fat cream cheese
- 2 tbsp capers drained and rinsed (optional)
- 1 tbsp chives chopped
- 1 tbsp horseradish
- 1 garlic clove finely minced
- Juice of 1/2 lemon
- 1/4 tsp Freshly ground black pepper
- 8 slices dark rye bread
- 120 g smoked salmon To reduce sodium, swap the smoked salmon for chopped grilled salmon.
- 1/2 English cucumber thinly sliced
- 1/2 cup roasted red pepper sliced
- 2 cups baby spinach
- 4 medium apples

Instructions
- In a medium-sized bowl, stir together cream cheese, capers (if using), chives, horseradish, garlic, lemon juice and pepper.
- Spread an equal amount of cream cheese mixture on four slices of rye bread and top each with an equal amount of salmon, cucumber, red pepper and spinach. Top with remaining bread slices and slice in half. Serve with an apple.
